MAX'S RESTAURANT VISAYAN FOOD FESTIVAL

Max's Restaurant Middle East now offers the best cuisines from Visayas prepared in true Visayan-style for a limited time only. Last October 4, 2017, I joined Max's Restaurant B-ring Doha branch on their Visayan Food Festival to try out their newest Visayan Dishes. As a loca of Iloilo, some of the dishes and its flavor seems familiar to me. Here are the snaps that I took and my brief review:




Bacolod Chicken Inasal 

It's a local dish from Bacolod, marinated for 24 hours and grilled to perfection. Served with chili-soy dip, atchara and jasmine rice. This is what I truly miss from home, the authentic chicken inasal. Max's version of the inasal is close enough to the original Visayan dish. It's my top pick from the menu. For 31 QAR only!




Balbacua

A popular dish from Cebu that was introduced during Spanish colonial era. It's a slow cooked oxtail with beef skin, black beans, banana plantain, star anise, turmeric and annatto. It's my first time to try this out and it has a bit of sweetness in flavor. I believe, we have our own version of this dish in Iloilo as well with pure savory taste. This is great when served hot. For 49 AED / 54 QAR / 3.900 KD only.

Sinuglaw

It's a dish derived from 2 famous cooking methods in the Visayas and Mindanao areas: Sugba means to grill, and Kinilaw means to cook by soaking in vinegar. Composed of  grilled beef belly, beef skin, and hammour ceviche with fresh vegetables. In my own preference, it has a creamy and savory taste that made it more exciting to eat. For 26 AED / 28 QAR / 2.500 KD only!




Inun-unan

It's a popular Visayan dish from Leyte; marinated milkfish belly, ampalaya, green chili, ginger, eggplant, black pepper, cane vinegar and cherry tomato. I haven't heard of this dish but it could be the Visayas' version of Paksiw na isda. I love the sour taste in it and the freshly cooked Bangus (milkfish). For 39 AED / 41 QAR / 3.900 KD only!




Piaya

It's originated from Negros Occidental. This is what I miss from Iloilo and we usually have this for merienda or dessert. It's made of a crunchy flatbread with purple yam filling served with ube and vanilla ice cream. It also has the original flavor with muscovado filling in it. It is really delicious and feels like home because it's a homemade version of Max's Restaurant. Grab your Piaya straight outta kitchen. For only 18 AED / 21 QAR / 1.800 KD only!
